Can I connect an 800G OSFP module on one side to a 400G QSFP112 or OSFP module on the other side?

Yes, if the optical protocol, lane rate, fiber type, and connector mapping match. The host ports must also support the corresponding OSFP or QSFP112 form factor.

What is the difference between 800G SR8 and 800G 2xSR4?

SR8 usually refers to one 800G link using 8 optical lanes. 2xSR4 is structured as two independent 400G SR4 links, each using 4 optical lanes.

What type of fiber cable should I use for 800G-to-400G breakout connections?
